Talala's market yard is the main market for Gir Kesar, and the orchards around it sit between the Gir forest and the Arabian Sea. A dry winter brings the trees into flower, the sea keeps the air moving, and a hot May ripens fruit with deep saffron flesh. We are scouting land near Talala now and will lease a plot only after soil and water tests, once enough Ahmedabad and Rajkot families reserve.

Kesar needs a dry, rain-free winter to flower and a hot May to ripen, on well-drained soil below pH 7.8. The Gir foothills, with the Arabian Sea a few kilometres away, are exactly that, and the Gir Kesar GI protects the name.
